Eggs and Spinach Breakfast

No recipe this morning. Just pure gratefullness.

Freshly laid eggs, still warm from the nest . . .

Juicy spinach leaves, just picked from the greenhouse.

Put them gently together, garnished only by a light sprinkling of sea salt.

Words simply cannot describe.

Thanks Simona. Sadly, all eggs are spoken for. Maybe by next weekend.

Thank you Paz and Sophie. I do love my chickens. I went from the chicken house to my computer, didn't stop by the fridge, so there are eggs in my jacket pocket as I write this. :)

I like the idea of spinach and eggs, did you just blanch the spinach first?

Hi Anne, No need to blanch the spinach, just sauté it in the pan before cooking the eggs. Of course, I'm talking about fresh spinach, not frozen. Happy cooking!

Hi Jann, Sometimes I think I've created a monster with all these hens. I sold 5 dozen this week and still have a dozen in the fridge that I have to use up. They just keep on laying, and laying, and laying ...
