

Mansi gave us several categories of healthy breakfast items, from each of which we had to choose at least one food. Well, the ingredients in Mr CC's breakfast were all there: grains, fruits, low-fat dairy, and nuts. The cinnamon is an added extra that packs a healthy punch when used on a daily basis, especially with high-glycemic foods. It turns out that cinnamon reduces spikes in blood sugar levels as well as reducing inflammation and cholesterol and I encourage its use.

Mr CC's Steel-Cut Oats
Serves 2
Ingredients:
3/4 cup organic steel-cut oats
2 cups water
1 apple, chopped (preferrably organic)
1/2 cup low-fat milk or plain low-fat yogurt
1 teaspoon organic ground cinnamon
2 teaspoons toasted, slivered almonds
Preparation:
Bring the water to a boil in a medium saucepan.
Slowly whisk in the oats and cook until the water boils again.
Immediately turn the heat to low and simmer the oats for 15 minutes, stirring occasionally.
Turn off the heat and allow the oats to sit, undisturbed, for another 5 to 10 minutes.
Stir and divide into bowls.
Divide the milk between each bowl then divide the chopped apples, dairy and cinnamon.
Top with the almonds and serve.
That's the breakfast I need to eat every morning especially after all the buttercream on the party cake!

Knowing Mr CC and your kitchen makes me picture the breakfast preparation process. Mr briciole also has his breakfast ritual. I particularly like the slivered almond detail.

Oatmeal is one of my favorite breakfast foods, tho one I do not eat all that often. The steel cut variety are my favorite, tho. Never thought about adding fruit to it, just a bit of brown sugar and lowfat milk. Blueberries might be good, and full of antioxidants, right?
