I had forgotten how healthy it is. I have a few vegan, or recipes with vegan substitution suggestions on my blog, my vegan friends have particularly liked my Vegan Peanut Soba, and it really packs a protein punch. If you want to be sure Jeffrey's getting some B12, try using tempeh, there's a great rendition of bacon made with tempeh available at natural food stores.
